Seeds

Loquat seeds are large, glossy brown stones—one to several per fruit—filling much of the centre. They are bitter and not eaten as a snack; discard when halving fruit. Like other rosaceous seeds they contain compounds that make them unsuitable as food without specialised processing that home kitchens do not do. Remove seeds before cooking flesh into jam or pies. Do not grind for “almond” flavour experiments.
