Longan skin (shell) is the thin, leathery tan-brown outer rind that protects the aril. It is not eaten. Peel by pinching and cracking; it separates more cleanly than lychee’s knobbly shell when fruit is fresh. Dried longans often keep a wrinkled shell until rehydrated or shelled for soup. Compost shells after peeling. Shell colour and slight flexibility help judge freshness—brittle, cracked shells with mould mean discard.
