The longan seed is a single smooth, dark brown stone filling the aril’s centre. It is hard, bitter, and not a table food. Slip the aril off and discard the seed, or leave it in dried whole fruit until the eater removes it at the bowl. There is no standard culinary use for longan seeds as spice. Treat them as waste or planting material only.
