Longan flesh is the translucent white aril—the only part normally eaten fresh. It is juicy, mildly musky-sweet, and slips off the shiny seed when ripe. Canned arils in syrup and dried flesh for Chinese dessert soups are the processed forms. Serve chilled for maximum floral character; heat softens and can turn the aril flabby. Discard any brown, fermented-smelling pieces. Pair with citrus, ginger, or coconut rather than heavy spice that masks the perfume.
