Fruit

Whole

Whole lime is the unbroken fruit as bought—skin intact, juice sealed—for transport, storage, and recipes that start from uncut citrus. This is the default retail and wholesale form. Room-cool storage preserves aroma better than long deep refrigeration for fruit you will zest soon. Pick by weight, skin sheen, and absence of soft spots. Whole limes are also roasted or charred briefly in some Mexican and Indian preparations to deepen flavour before juicing. Once the skin is broken, treat as cut fruit with short remaining life.
