Peel
Lime peel is the outer coloured zest and underlying white pith. Zest holds the essential oils that smell more of lime than the juice alone; pith is bitter and usually minimised when microplaning. Candied peel, dried zest, and twisted garnish peels are classic bar and pastry forms. Prefer unwaxed fruit for zesting; scrub waxed fruit well. Zest only the green (or yellow) flavedo—white albedo turns drinks and batters harsh. Oils oxidise quickly once grated; zest into sugar, salt, or butter to lock aroma for a day or two.
