Halved Fruit

Halved lime is the fruit split across the equator or pole-to-pole for squeezing tableside, grilling cut-side down, or salting for quick condiments. A sharp knife through the centre exposes maximum juice vesicles for hand or reamer pressing. Grill halves briefly to caramelise sugars and soften bitterness before squeezing over seafood or steak. Bars and taquerias portion halves for rims and drinks; cooks use them as ready acid portions. Cut only what you will use within the service—cut faces dry and dull within an hour in open air.
