Split
Split kidney beans are dried beans cracked or halved so skins open and cooking time shortens relative to whole dried beans. They break down more readily into thick soups and purees while still carrying the classic red-bean flavour. Less common on supermarket shelves than whole kidney or red lentils, they appear in specialty and bulk trade for soup makers. Sort for stones, rinse, and cook thoroughly—splitting does not remove the need for a full boil to destroy lectins. Use where you want body and creaminess rather than neat whole beans in chili. Soak still helps evenness if the splits are large.
