Job’s tears flour is milled from the pearled or whole grains of Coix lacryma-jobi—a gluten-free cereal flour with a mild, slightly sweet, barley-like taste. It thickens soups and porridges, softens steamed buns and cookies when blended with rice or wheat flour, and appears in East Asian health-food baking and beauty-drink mixes. Sift before use; pure coix flour can be dense, so recipes often cut it with rice flour or starch for lighter crumb. Toast lightly in a dry pan for nuttier aroma when making porridge bases. Store cool and airtight—high surface area means rancidity develops faster than whole grain.
