Hickory paste is ground sweet hickory nutmeat worked until oily and thick, a wild-flavoured butter from Carya species that taste good enough to eat. Bitternut hickory has no place in this jar. Makers crack hard shells, pick meats, and grind. A good paste is fragrant and naturally sweet-rich. A bad paste is bitter, gritty with shell, or rancid. Spread sparingly or swirl into confections that can handle a wild edge. Keep cold. Label as tree nut in the walnut family.
