Only sweet species belong here; bitter hickory meats will ruin any bake. The path is crack, pick, dry, and grind careful meats. A good flour smells rich and walnut-adjacent without paint rancidity. A bad flour is bitter from wrong species or old oil. Use in small percentages in cookies or coatings where native flavour is the point. Freeze what you mill.
