Grapefruit stem is the woody peduncle and calyx end of the fruit—not an edible product but a quality clue. A fresh, intact stem button and dry stem scar suggest careful picking; mould or wet rot at the stem end spreads into the fruit. Packers clip stems short for cartons. Inspect the stem end when buying; discard fruit with soft, leaking stem scars. No culinary use beyond compost once the fruit is peeled.
