Peel

Grapefruit peel includes coloured zest (oil-rich flavedo) and white pith (bitter albedo). Zest is highly aromatic—floral-citrus and slightly bitter—ideal for baking, bitters, and dry rubs. Thick peel candies well after repeated blanching to tame pith bitterness. Zest only the coloured layer for most cooking; candy or dry strips for garnish and tea. Scrub waxed fruit before zesting. Pith left on marmalade peel is traditional for set and bitterness balance.
