Grapefruit juice is the expressed liquid from the pulp—brighter and more bitter than orange juice, excellent in breakfast glasses, cocktails (Paloma-adjacent drinks), reductions, and marinades. Fresh-squeezed tastes cleaner than from-concentrate; pink and red juices carry more colour and often perceived sweetness. Use in vinaigrettes, sorbets, and glazes for rich fish or duck. Important drug interactions: grapefruit juice inhibits certain liver enzymes—relevant for many prescriptions. Sweeten or blend with orange if pure juice is too harsh.
