Stem
Grape stems (rachis and pedicels) are the green woody framework of the cluster—fibrous, astringent, and not eaten as a vegetable. Fresh green stems signal recent harvest; brown brittle stems mean older fruit. In whole-cluster wine ferments, stems add tannin and herbal notes if ripe enough; green stems can taste bitter. Kitchen use is mostly as a handle for serving clusters or as compost after destemming. Do not cook stems into sauces unless a recipe specifically wants that astringency. Destem before juicing for clean, stem-free juice.
