Juice

Grape juice is the sweet, acid-balanced liquid expressed from crushed berries—white from pale flesh or limited skin contact, red/purple when dark skins contribute colour and phenolics. Fresh unpasteurised juice ferments readily; commercial juice is usually pasteurised and may be from concentrate. Flavour tracks cultivar: Concord is foxy and jammy; vinifera types are cleaner and more wine-like. Drink chilled, reduce to syrup for desserts and sauces, freeze as granita, or ferment into wine and vinegar. In cooking, grape juice glazes meats and sweetens braises without refined sugar. Watch for added sugar on labels when you want pure juice.
