Fenugreek seeds are hard angular amber seeds—bitter and maple-like when gently toasted, harshly bitter if burned. Whole seeds temper in oil for dals and pickles; ground seed joins curry powders. Toast until fragrant, cool, then grind. Use sparingly until you know the batch. Store whole seeds airtight.
