Fenugreek leaves (methi) are aromatic greens—fresh bunches with bitter maple-celery perfume, or dried kasuri methi crumbled into curries at the end. Fresh leaves fill parathas and saag; dried leaves are crushed between the palms as a finish. Balance bitterness with fat, tomato, or dairy. Strip tough stems. A little dried methi goes far. Keep fresh bunches cold; store dried airtight.
