Cubeb berries are dried unripe Piper cubeba fruits, sold whole with a tailed stem. Flavour sits between black pepper and allspice—warm, slightly bitter, with camphor and pine. Crack or grind just before use. Historic Middle Eastern, North African, and Indonesian cookery used cubeb in blends and sausages; modern cooks revive it in rubs and gin botanicals. Toast lightly and dose sparingly. Store whole berries airtight.
