Refined coconut oil is deodorised and bleached for a milder tropical fat that handles higher heat with less coconut perfume. Bakers and fry cooks use it when structure matters more than aroma. It remains coconut fat—solid when cool—not a seed-oil blend unless labelled otherwise. Good refined oil is clean and neutral; old oil still turns rancid. Labels should separate refined from virgin styles. Store sealed away from stove heat.
