Seeds
Chicory seeds are small and used mainly for sowing, though related endive/chicory seed can appear in specialty sprouting mixes. They are not a major culinary spice like celery seed; roasted chicory “coffee” comes from the root, not the seed. If sprouting, rinse and grow as for other microgreens; flavour is bitter-green. For cooking, prefer leaf, chicon, or roasted root products unless a recipe specifically calls for seed.
