Peel

Chicory peel usually means the outer leaf layers or trimmed root surface removed before cooking forced chicons or root chicory. Outer leaves can be more bitter and green; root peel is corky and dirty compared with the white flesh inside. Save sound outer leaves for braising if not damaged; compost truly tough trimmings. Scrub roots before peeling. For Belgian endive, light-blanched outer leaves still work in cooked dishes even if too bitter for raw salads.
