Chervil flower buds are the unopened umbels of Anthriscus cerefolium—milder and greener than many herb flowers, with the same delicate anise-parsley perfume as the leaves. They are a fine garnish more than a bulk herb. Scatter over salads, eggs, and fish just before serving. Heat fades the aroma quickly. Pinch plants to delay flowering if you want more leaf; once buds form, leaf quality declines.
