Mature Pod
Broad bean pod is the outer casing of the seeds—fibrous when mature, sometimes edible when very young. Fresh broad-bean pods are usually shelled; the pale inner skin on each bean may be slipped for tenderness. Young pods of some beans cook whole; mature pods go to compost after shelling. Use fresh shelled beans quickly—sugar turns to starch after harvest.
