Quick Bread
Quick breads are chemically leavened loaves and loaves-in-spirit—banana bread, soda bread, muffins, scones, zucchini bread—raised with baking powder or soda rather than long yeast fermentation. Crumb is cake-like or tender-biscuit, not chewy gluten webs. Mix gently to avoid toughness; bake soon after combining wet and dry. Serve sliced with butter, or as breakfast and tea loaves. They stale differently from yeast bread and often freeze well wrapped.
