Breadcrumbs are dried or fresh bread reduced to crumbs for coating, topping, binding, and thickening. Fresh (soft) crumbs bind meatballs and stuffings; dry crumbs crisp as panko-style or traditional coatings for frying. Toast crumbs in butter for pasta toppings. Make from stale loaves pulsed in a processor, or buy graded crumbs. Season before coating. Avoid heavily seeded or sweet breads unless the flavour suits the dish. Store dry crumbs airtight; freeze soft crumbs.
