Rim

The rim is the flared upper edge of the black trumpet’s funnel—often the thinnest, most delicate part, first to crisp in a hot pan and first to dry when dehydrating. It carries aroma and can shatter if overhandled when dry. Leave rims on for whole sauté; for uniform dice some cooks fold or trim ragged rims. In dried form, rim pieces rehydrate quickly and can be used as garnish shards.
