Black currant fruit is the whole berry on or stripped from the strig—glossy, nearly black when ripe, with a thin skin and juicy, seeded interior. Market fruit should be fully coloured and dry; red or green berries are underripe and harshly acidic. Whole fruit goes to fresh sale, freezers, jam kettles, and juice presses. Strip gently to avoid crushing; juice stains heavily. Size and aroma vary by cultivar (Ben Lomond, Titania, and others).
