Shelled beech nuts are whole or nearly whole kernels already freed from the hard shell for immediate cooking or snacking. Convenience is high; shelf life is shorter than sound in-shell stock if the pantry is warm. Taste should match fresh mast—mild, sweet, soft-oily— without shell dust, mould flecks, or varnish aroma. Inspect for shards left from cracking before serving children or grinding into paste. Because commercial shelling of beech is rare, most shelled lots are hand-processed after forage. Vacuum packs help but still need cool storage after opening. Freeze what you will not use within days. Good shelled stock looks plump and pale; poor stock is shrivelled, dark-spotted, or greasy-stale. Light roasting is the usual kitchen next step. Label clearly as tree nut and keep naming distinct from unrelated commercial “Beechnut” products.
