In-shell beech nuts are intact seeds still sealed in their hard woody cases, the form most foragers gather from the leaf litter after cupules open. The shell slows oxygen and light, often keeping the tiny kernel fresher than poorly stored shelled meats. Guests can crack their own for interactive snacking; bakers shell ahead when they need clean, even stock for grinding. Once opened, flavour should be mild and sweet—never mouldy or paint-like. Store cool and dry. Discard nuts with holes, soft spots, a dusty rattle, or a musty smell. Use a small cracker or careful hammer work; smashing too hard pulverises kernels into shell grit. Provide a bowl for waste so fragments do not wander into desserts. Mast years decide whether you have a bowlful or a handful. Treat the crop as tree nuts, gather only from clean woods away from busy roads, and freeze shelled surplus promptly after cracking.
