Shell
The beech-nut shell is the hard woody case that protects the tiny triangular kernel until cracking day. It is not food. Its job is storage life, transport durability, and—when you roast in-shell—slowing heat so the meat steams gently rather than scorching at once. Home cooks crack shells for peak freshness; any commercial packer aspirates shell grit before kernels ship. Fragments are a dental hazard, so inspect meats carefully after hand cracking. Shells may be composted or used as dry biomass; do not assume they are safe fuel for food smoking without knowing how the tree and soil were exposed. Sound shells look dry and closed; soft spots, holes, or a musty dust inside signal insects or mould. Because the shell limits oxygen, good in-shell lots often outlast warm shelled kernels. Keep shell grit out of grinders and flour mills—one shard can ruin a paste batch. All culinary value lives in the kernel; the shell only decides how long that value survives.
