Paste
Beech-nut paste is a thick, oil-bound mass made by grinding clean, husked kernels until the particles cling and no longer pour like flour. Because beech nuts are tiny and oily, the grind turns spreadable with little added fat, but the flavour stays delicate—soft sweetness with a faint woodsy edge rather than the bold perfume of hazelnut praline or almond marzipan. Makers sometimes warm-roast the kernels first for a deeper note; rawer grinds stay paler and milder for tasting plates where the forest origin is the point. This is not a supermarket staple. Mast years produce only small lots, so paste appears mainly from foragers, experimental wild-food kitchens, and chefs who want a rare filling or binder. Loosen a stiff batch with a spoon of warm water, milk, or light syrup before folding it into batters so it does not seize into clumps. Fresh paste smells clean and nutty; anything like varnish or paint is oxidised and should be discarded. Keep jars cold or frozen, and label clearly as tree nut—never confuse this forest product with unrelated commercial foods that merely share the word “beechnut.”
