Blanched Kernel
Blanched beech-nut kernels have the thin brown pellicle loosened with hot water or steam and rubbed away, leaving a paler seedmeat. The flavour is cleaner and less tannic than skin-on stock while still showing the mild sweet oil that defines beech. Pale colour helps when the nut will be ground into a light paste or scattered on delicate desserts where dark freckles would distract. Blanching is fussy work on seeds this small, so it is a deliberate pastry choice rather than an industrial default. Dry the kernels thoroughly afterward so later roasting does not sputter and freezing does not ice the surface. Blanched pieces scorch faster—watch colour, not only the clock. Good blanched kernels look ivory and smell sweet; grey or sour-smelling stock was left wet too long. Blanching is not roasting: one step cleans colour, the other builds toast aroma. Label as tree nut regardless of the paler look.
