Tender basil stems are green, flexible upper stalks that chop into pesto and sauces without stringiness. They carry leaf aroma and add bulk when leaves alone are scarce. Slice thin; avoid if any woodiness appears. Excellent in oil-based sauces where a blender will pulverise them smooth.
