Grits
Barley grits are cracked or coarsely milled barley—smaller than whole grain, coarser than flour—for porridge, polenta-style sides, and soup thickeners. Texture is hearty and slightly pasty when fully cooked; flavour stays malty and mild. Simmer in water or stock with salt, stirring as starch thickens. Serve savoury with butter and herbs or sweet with milk. Not the same product as corn grits; cooking times and flavour differ.
