Amaranth flakes are rolled or flattened seeds—thinner and quicker-cooking than whole grain, similar in role to rolled oats but much smaller. They soften in hot liquid for porridge, bind granola clusters, and bulk veggie burgers or meatloaf without much chew. Use as a hot cereal, cereal bar binder, or light breading component. Because flakes have more surface area, they stale and absorb fridge odours faster than whole seed; keep sealed. Flavour stays earthy-nutty; a brief dry toast improves aroma before milk or water goes in.
