Acorn paste is a wet or oil-bound fine grind of leached oak kernel, denser and more cohesive than free-flowing flour. Traditional wet milling for porridge and flatbreads produces a soft puree that sets as it cools; modern dry-ground pastes hold more residual fat and need loosening with water or stock. Flavour should be gentle and earthy after a complete tannin leach—any lasting bitterness means rework or reject. Cooks fold paste into batters, form cakes, or simmer it into thick porridges and regional jellies. A light roast of the dried meats before milling adds toast without the sharp edge of burnt starch. Quality paste is uniform, free of shell grit, and free of sour fermentation smells. Stiff paste seizes if dumped cold into foams; warm and whisk it thin first. Seal and chill or freeze small lots, because moisture invites spoilage faster than dry flour.
