Butter
Acorn butter is a spoonable spread ground from thoroughly leached and dried oak kernels until residual oil binds the starch into a thick paste. It never becomes as fluid as cashew butter; the high starch keeps it dense, slightly grainy, and more porridge-like on the tongue. Flavour should read mild forest-earth and toasted cereal, not harsh tannin. Use it on bread, stirred into sauces, or loosened with warm water for fillings and soups. Because fat content is moderate, oil separation is less dramatic than peanut butter, yet jars still need a stir and cool storage. Scorching in a dry pan turns the starch bitter fast, so warm gently. Good butter smells clean and nutty-cereal; paint-like or mouldy notes mean discard. Home makers must leach kernels fully before grinding—butter cannot fix unprocessed astringency. Treat it as a specialty wild-food product, not a supermarket almond-butter swap.
