Butter
Walnut butter is a spoonable spread ground until oils fully release and the mass turns smooth or lightly textured. It tastes unmistakably of walnut—sweet, bitter-edged, and rich—rather than the neutral peanut profile many people expect from “nut butter.” Natural styles separate as oil rises; stir before use. A light roast before grinding deepens aroma; raw grinds stay greener and more tannic. Either way, scorching in a dry pan ruins the jar in seconds. Spread it on toast, whisk into dressings, thin into noodle sauces, or bake into cookies where moisture and fat both matter. Because walnut oil oxidises fast, buy small jars, keep them cold, and freeze extra. Good butter smells freshly ground and clean; bad butter smells of varnish or cardboard. Emulsified commercial jars stay uniform longer but still stale if warm. Major tree-nut allergen labelling applies. Compared with hazelnut butter it is less chocolate-leaning; compared with almond butter it is more bitter-aromatic when fresh.
