Cold Pressed
Cold-pressed beech-nut oil is mechanically expressed at low temperature so aroma and delicate fatty acids survive into the bottle. It tastes more of the nut—soft, sweet, and lightly woodsy—than refined neutral fats. Best work is finishing: salads, warm grain bowls, simple fish, or a brush on flatbreads where heat stays gentle. Hard frying wastes the perfume and can leave a bitter polymerised edge. True cold-pressed beech oil is rare; historical farm presses ran when mast surplus allowed, and modern artisan lots are tiny. Buy dark glass, keep cool, and finish within months of opening. Cloudiness can be normal in unfiltered oil; varnish or fishy smells are not. Price reflects scarce raw material and low thermal abuse, not a bulk commodity grade. Do not confuse this flavour oil with neutral refined frying fat. Allergen labelling still applies to the expressed oil as a tree-nut product.
