Cracked Seed

Cracked basil seed is an uncommon form—broken seed coats sometimes used to speed hydration for drinks or in experimental baking. Most traditional recipes use whole seeds that gel intact. If cracked, expect faster water uptake and slightly cloudier gel. Not a standard spice crack like coriander. Prefer whole seeds unless a recipe specifies otherwise.
