Powder

Cocoa powder is cocoa solids left after most butter is pressed from liquor, then milled fine. Natural powder is lighter and more acidic; Dutch-processed is darker, milder, and dissolves more readily. They are not always interchangeable where leavening chemistry matters. Bloom in warm liquid or fat before batters. Store airtight away from humidity and strong spices. Sweetened hot-chocolate mixes are a different product.
