Cocoa liquor (cocoa mass) is finely ground roasted nibs—solid at room temperature, fluid when warm—containing cocoa solids and natural cocoa butter. It is unsweetened pure chocolate in the industrial sense and the base for powder, butter, and bars. Melt into ganache, brownies, and ice cream for deep chocolate without extra sweetness. Despite the name it is not alcoholic. Store like chocolate: cool, dry, sealed.
