It is stronger and more stable than fresh brew, sometimes standardised for caffeine or polyphenols. Cooks and manufacturers use extract when volume, consistency, or cold solubility matter more than the nuance of a single steep. Dose carefully—extracts can taste flat or medicinal if overused. Prefer named origin extracts for fine desserts; generic “tea flavour” is closer to aroma chemistry than leaf character.
