Stevia Extract
Stevia extract is a purified sweetening concentrate from the leaves of Stevia rebaudiana, standardised mainly on steviol glycosides such as rebaudioside A, stevioside, and newer high-purity reb M or reb D fractions. Two hundred to four hundred times sweeter than sucrose depending on the glycoside mix, it sweetens zero-calorie drinks, flavoured waters, yogurts, confectionery, and tabletop packets without adding fermentable sugars. Bitterness and liquorice notes vary by glycoside profile; modern refining and blending soften those edges for mainstream soft drinks and dairy. Commercial extract is sold as white to off-white powder, liquid drops, or carrier-diluted granules. Extraction typically uses water or approved solvents, followed by purification and crystallisation to food-additive purity. Labels often declare steviol glycoside content and may highlight high-reb-A or next-generation glycoside grades for cleaner taste at higher use levels.
