Rebaudioside M (reb M) is a scarce leaf glycoside, now also made by bioconversion, prized for a rounder, more sucrose-like sweetness with far less liquorice than reb A. Premium sodas, dairy, and tabletop blends pay for it. Intensity is still in the hundreds of times sugar; the point is taste, not power. Supply is tighter and cost is higher. A "reb M" claim on a cheap packet may be a dusting on reb A. It still will not caramelise. Use it when the drink is quiet and the aftertaste of reb A would show.
