Ginkgo Nut oil is the expressed fat of the seed of Ginkgo biloba, eaten cooked in East Asian cuisine, sold for finishing, baking, and sometimes gentle cooking. Cold-pressed oils taste more of the nut; refined oils are milder and sometimes more heat-tolerant. Sensory character: soft, mildly sweet-resinous when cooked, with a distinctive ginkgo aroma. Composition context: not primarily an oil-snack nut; cookery focuses on the tender cooked kernel. Drizzle on salads, brush on pastry, or enrich dishes linked to Japanese chawanmushi, Chinese congee and banquet dishes, and Korean snacks, always cooked in limited portions. Many nut oils dislike aggressive deep frying—bitterness and polymerisation appear when abused. Buy small dark bottles and recap promptly. Storage: fresh seasonal; canned and frozen cooked nuts are common commercial forms. Cook thoroughly and serve in modest amounts; outer fruit pulp can irritate skin during processing. Allergen oils can still matter clinically: treat as specialty seed with food-safety portion guidance—not an unlimited trail mix nut. Quality oil smells clean and true to ginkgo nut, never like varnish.
