Sacha Inchi oil is the expressed fat of the seed of Plukenetia volubilis, the Inca peanut from the Amazon, sold for finishing, baking, and sometimes gentle cooking. Cold-pressed oils taste more of the nut; refined oils are milder and sometimes more heat-tolerant. Sensory character: mild, green-nutty when roasted; raw can be less pleasant—roast for snacks. Composition context: celebrated for omega-3-rich oil in specialty nutrition markets. Drizzle on salads, brush on pastry, or enrich dishes linked to Peruvian specialty snacks, oils, and protein powders more than classical European baking. Many nut oils dislike aggressive deep frying—bitterness and polymerisation appear when abused. Buy small dark bottles and recap promptly. Storage: oil and roasted seeds need cool, dark storage against oxidation. Roast for flavour; protect oil from heat and light more carefully than olive oil. Allergen oils can still matter clinically: treat as specialty seed—label clearly. Quality oil smells clean and true to sacha inchi, never like varnish.
