Hickory oil is the expressed fat of nuts of Carya species native mainly to North America, sold for finishing, baking, and sometimes gentle cooking. Cold-pressed oils taste more of the nut; refined oils are milder and sometimes more heat-tolerant. Sensory character: sweet to bitter depending on species—shagbark is prized, bitternut is not a dessert nut. Composition context: rich oil from sweet species, traditionally used in small batches. Drizzle on salads, brush on pastry, or enrich dishes linked to foraged American baking, regional sweets, and wild-food cookery. Many nut oils dislike aggressive deep frying—bitterness and polymerisation appear when abused. Buy small dark bottles and recap promptly. Storage: freeze sweet hickory kernels; quality varies wildly by tree. Do not grind bitternut hickory for dessert paste; species choice is the recipe. Allergen oils can still matter clinically: treat as tree nut (walnut family). Quality oil smells clean and true to hickory, never like varnish.
