Walnut oil is the liquid fat expressed from Juglans regia kernels, famous for a soft, toasty-sweet aroma when cold-pressed from good stock and for a quieter profile when refined. High polyunsaturated content makes it a finishing star—salads, warm vegetables, grain bowls, and some baking—and a poor choice for aggressive deep frying, where it turns bitter and polymerises. Roasted-kernel presses taste darker; pale presses taste greener and more delicate. Buy small dark bottles, recap promptly, and store cool. Fresh oil smells of clean walnuts; rancid oil smells of paint or fish and should be discarded. French and other European producers long treated walnut oil as a regional luxury; global specialty trade now ships it widely. It is pure fat, not a protein food, but remains a major tree-nut derivative for allergen labelling. Taste before dressing a delicate salad—stale oil will dominate the plate. Refined styles tolerate slightly warmer cooking but still prefer respect over abuse.
